Considerations
Many people see a refrigerator as a box to keep general items of food cold, but there is a lot more to refrigeration than that! Manufacturers now recommend specific temperature ranges for different types of food. For instance, fish will requires a fridge which will conserve food at a high humidity level using a coil system and at a temperature of 0 degree to plus 1 degree. Meat needs to be kept at a temperature of minus 1 to plus 2 degrees centigrade.

Blast Chillers
Chilled banqueting systems cannot be installed without the correct size blast chiller. However it is not necessary to install a large blast chiller. If used properly it is possible to chill food in batches throughout the day in a relatively small blast chiller (which also has the capability of shock freezing).
